Roast Beef with Mole Sauce

For the roast beef:
1kg Sirloin
Salt and pepper to taste

For the mole sauce:
2 Red onions
1 Large carrot
2 Tomatoes
1 Dried chili pepper
60g Toasted almonds
10g Dark chocolate

Preparation

Step 1

For the roast beef: Trim any excess fat from the sirloin, cut it into 4 strips, add salt and pepper and pan sear each piece on all sides.

Step 2

Place the meat into the oven for 5 minutes at 180ºC (medium rare).

Step 3

For the mole sauce: Chop the onions and carrot and gently sauté for 10 minutes.

Step 4

Add the chopped tomato to the onions and carrots and sauté all together.

Step 5

Meanwhile, sauté the chili pepper in a separate pan then cool and remove the seeds.

Step 6

Add the chili pepper to the main sauté, along with a glass of water.

Step 7

Purée the entire mixture, adding in the almonds and dark chocolate.

Step 8

Serve the warm slices of beef on a platter topped with the mole sauce.
