Avocado, Lime Oil and Poached Egg

15' Easy 12345

For the avocado:
2 Avocados
Salt
Pepper

For the lime olive oil:
100ml Bertolli EVOO
Zest of 2 limes
4 Eggs

Preparation

Step 1

For the avocado: Peel and cut the avocados into chunks.

Step 2

Season them with salt and pepper, add a few drops of lime juice and set aside.

Step 3

For the lime oil: Pour the oil into a saucepan and grate the lime peel into it. Cook on low heat for 10 minutes.

Step 4

For the eggs: Place a pot of water on the stove to boil. In the meanwhile, crack each egg into a square of cling wrap over a cup.

Step 5

Close and twist the film around the egg until the egg package is tightly closed (repeat this process with all 4 eggs).

Step 6

Poach the eggs for 5 minutes and remove them from the water.

Step 7

MAKE 4 SERVERS.
