Chocolate Brownie with Beets and Olive Oil
100g Dark chocolate
85ml Bertolli EVOO
2g Baking powder
100g Boiled beets
First, melt the dark chocolate and use a whisk to mix it with the EVOO.
Next, in a separate bowl, whisk together the eggs, sugar and a pinch of salt.
Combine the contents of the two bowls and sift in the flour and baking powder. Mix well then grate the beets into the mixture and stir through.
Spread the mixture over an oven tray lined with baking paper and bake at 180ºC for 15 minutes.
