We currently use a similar extraction process at Bertolli. We no longer use the traditional machines that appear in the chart, but modern equipment in order to deliver olive oil of the highest quality in every bottle.
Extraction Process

Step 1
Olives
Olives grow on trees, after which they are harvested. Traditional olive groves usually include hundred-year-old trees. Olives are harvested using nets, tractors and other tools.
Step 2
Mill
Once they are collected, the olives are transported to a mill for processing. They are separated from the branches, leaves and debris in the first place, and washed using water. They are then crushed, thus obtaining a paste.
Step 3
Press
Solids and liquids are removed from the olive paste by using the cold pressing method. Once this process has been completed, excess water and sediments are separated from the olive oil.

UNFILTERED EXTRA VIRGIN OLIVE OIL
Unfiltered Extra Virgin Olive Oil comes from the first pressing of olives, without using heat or additional refining or processing methods.
Step 5
FILTRATION
Extra Virgin Olive Oil is obtained by lightly filtering olive oil.
BERTOLLI EXTRA VIRGIN OLIVE OIL
Our Extra Virgin Olive Oil undergoes thorough quality tests. Our dark green bottle protects the product from being damaged by light.
Step 4
REFINING
Olive oil is refined to create the milder flavors of Mild Olive Oil and Extra Light Tasting Olive Oil, which are obtained by adding Virgin Olive Oil.
